I am the Executive Chef at The Mövenpick Asara Resort & Spa in Hua Hin.
How long have you lived in Hua Hin or been coming to Hua Hin?
I have been coming to Hua Hin for many years as a visitor but moved in permanently last October after the compulsory quarantine in Bangkok.
What did you know about Hua Hin before you moved here?
I always liked the long stretch of beach, the fresh seafood restaurants and specially the golf courses.
What do you like most about your profession?
The ability to travel and work in different places in the world, meeting diverse cultures and cuisines. Putting a smile on the face of a satisfied guests is one of the most satisfying experiences. Having done several Hotel openings and coming back years later to those hotels and seeing those kitchens and restaurants you designed, some staff you hired, even some signature dishes still in the menus!
What do you like least about your profession?
Probably packing and unpacking, and the ability of some airlines to still lose your luggage. Also, saying goodbye to colleagues with whom you have shared so much after many months working in remote, beautiful places.
What do you like most about Hua Hin?
The size of the city, everything is at hand. The sea and its bounty and the perpetual smile and gentle disposition of the people.
What is your favorite restaurant and why? (please don’t promote your own restaurants)
Daddy Deli in Hin Lei Fai by Chef Peter. His dry aged meat is cooked to perfection or wrapped for you to cook at home, the rest of classic dishes in the menu are flawless too. For a quick dinner on freshly made sushi you cannot go wrong with Aroi Sushi on Soi 6 and finally Duangkaew Cuisine on 83/158 will surprise you with some modern, perfectly executed dishes too.
What do you like to do in your free time and why?
I like sports. I enjoy tennis and golf, swimming, eating out and reading history and non-fiction books.
What would you recommend to new-comers to do in Hua Hin and why?
Enjoy the beach and the fresh seafood or admire the charming architecture of palaces and train station of the 20s and 30s of the last century. Visit the Cicada and Night Markets for great street food and souvenirs and play a round or two of golf.
Tell us a surprising fact that the public might not know about you?
Before realizing my true calling was cooking, I worked at a radio station as a newscaster and DJ and led my own heavy metal band. Not being able to sing to save my life that was something quite remarkable.
What is the most outlandish thing you have ever done and why?
Taking two speed boats, four scheduled flights, one train and a several rental cars to reach from a small island in The Turks and Caicos in the Caribbean to Bucharest in Romania in time to watch my football team, Athletic Club Bilbao, play, and lose, the Europa League Final 2012.
