Riccardo Ioanna is the new Executive Chef at the InterContinental Hua Hin Resort and he has cruised the world getting here. The World being the World Cruise ship, the largest residential cruise ship on the planet at 644 feet in length (196 meters). Since launching in 2002 The World, with its 165 individual homes, has continuously circumnavigated the globe allowing its residents to wake up in new exotic locals every few days.
The World has multiple restaurants and Riccardo has worked as the “Chef De Cuisine” in two of them. “Tides” a casual Mediterranean styled daytime restaurant which turns into an elegant Italian restaurant in the evenings and “Marina”, a contemporary steak house.
From the World Riccardo went on to becoming the Executive Sous Chef at the InterContinental Resort in Bali before charting a course for Hua Hin to join the InterContinental.
One of Riccardo’s first actions was to fine tune The InterCon’s Sunday brunch experience which takes place at their Beachfront Azure Restaurant. Sunday Brunch guests can now expect more “International cuisine”, comprised of Asian and European dishes. All products both local and imported are carefully selected. Brunch guests will find a wider variety of starters and antipasti, a carving station with roasted pork, whole baked Fish, and long-time braised meat on the bone. Additionally, they have a sushi and sashimi extravaganza, a la minute wagyu beef tartare, and yellow tail tuna. For dessert, it’s a Buffet dessert line with baked cake, an ice cream bar, fresh fruits, and mini individual desserts. Another special difference with the revamped brunch is that Chef Riccardo himself will go around serving selected food to guests.
