What is your full name and age?
Troy Medynski, 43
What is your current Job Position?
Director of Food and Beverage at Intercontinental Hua Hin Resort.
How long have you lived in Hua Hin or been coming to Hua Hin?
Since September 2023
What did you know about Hua Hin before you moved here?
I have only heard of this beautiful beachside town with huge potential. Being from the Gold Coast in Australia, beautiful beaches and great food and beverages resonated with me, along with the warm weather.
What do you like most about your profession?
I have been in hospitality since I was young, it is a great outlet for my creativity and delivering exception service and guest memories whenever they stay with us. I love the industry and what it has offered me in my career, the chance to travel the world, meet amazing people and build strong relationships with our guests.
What do you like least about your profession?
Change is inevitable; however, I haven’t been a fan of the change away from guest service and engagement in our industry in favor of AI and technology. Guest engagement and interaction has been what has made hospitality a pillar of every community and the recent changes to save a few pennies in exchange for less engagement is what I have come to like least.
What do you like most about Hua Hin?
I love the laidback lifestyle whilst still having access to the big city vibes down the road. Being so close to the ocean gives us access to great fresh produce and local suppliers and products made here are a real bonus.
What is your favorite restaurant? (please don’t promote your own restaurants)
In the short time I have been in Hua Hin, I do like the pizzas from Andreas Italian Trattoria. Always consistent dough and tasty. It’s the little things.
What do you like to do in your free time?
Spending time with family, as hospitality is a full-on job that consumes a lot of our time, the time we get outside of a hotel and the industry is more and more valuable. Weather it is taking photos, cooking, or just watching movies, family is still most important, as is the time I get to spend with them.
What would you recommend to new-comers to do in Hua Hin.
I recommend a visit to monsoon winery, this is a very impressive setup and good value wines, I also recommend heading to the beach in the late afternoon. There is always something relaxing about the ocean at sunset.
Tell us a surprising fact that the public might not know about you?
I turned down a job at apple to stay in the hospitality industry.
What is the most outlandish thing you have ever done?
Many years ago, when I was working as a scuba instructor, on a dive we did regularly, we came across a shiver of sharks and we started to feed them, from that day, I became a regular shark feeder for groups of tourists at the site.
